Quick 'N Easy Beef and Pepper Stir Fry and Spinach Salad

If youre looking for a quick and easy supper, this fits the bill. The Beef and Pepper Stir Fry recipe only takes about 10 minutes to prepare and another 10 to 15 minutes to cook. The Spinach Salad recipe takes about 5 minutes to make. You can have supper ready in less than 30 minutes.

I know when youre working and youre in a rush because youve got other commitments in the evening, its always great to find quick recipes that are tasty.

Quick N Easy Beef and Pepper Stir Fry

1 lb. sirloin steak cut in bite-sized pieces
2 tbps. soy sauce
2 tbsp. sherry
1 tbsp. cornstarch
1 tsp. brown sugar
2 tbsp. oil
2 garlic cloves, minced
1 tbsp. grated fresh gingerroot
1 red pepper, seeded and sliced
1 yellow pepper, seeded and sliced
1 cups snow peas
2 green onions, sliced
4 tbsp. water or broth
4 tbsp. oyster sauce
cooked linguini for 4

Method:

In a bowl, mix steak, soy sauce, sherry, cornstarch and brown sugar. Marinate steak in this mixture while you prepare the veggies for the recipe. Heat the oil together in a wok and stir-fry garlic and gingerroot for about 30 seconds. Add peppers, peas and green onions and stir-fry over high heat for about 3 minutes. Add beef and marinade to wok and stir-fry for another 3 to 4 minutes. Pour in the broth and oyster sauce and stir until sauce has slightly thickened. Serve over linguini noodles.

Makes 4 servings.

Spinach Salad

Serve this great Spinach Salad with the Beef N Pepper Stir Fry above and youve got a complete meal.

10 oz. pack fresh spinach, washed and patted dry
2 tbsp. sesame seeds
1 hard-boiled egg, chopped
cup sliced mushrooms
cup bacon crumbs
cup canola oil
2 tbsp. soy sauce
2 tbsp. wine vinegar
tsp. sugar
tsp. salt
1/8 tsp. pepper
1/8 tsp. ground ginger
1 small garlic clove, minced

Method:

In a large bowl, mix spinach, sesame seeds, egg, mushrooms and bacon crumbs. Pour the remaining ingredients into a blender. Blend on low for about 30 seconds or until oil is mixed in well. Pour dressing over salad and mix gently, coating the spinach and mushrooms. Makes 4 servings.
